Recipe of the Month – Spring Noodle Soup

Serves: 4-6

Ingredients:

4 c. vegetable broth
1 carrot, chopped
1 green onion, chopped
sea salt
2 c. spring greens, finely chopped
1/2 c. sprouts
2 c. noodles, cooked and drained

Directions:

– Heat broth
– Add carrots and onion.
– Add salt to taste.
– Simmer 10 minutes, until vegetables are almost tender.
– Add spring greens and sprouts. Cook until bright-colored.
– Add noodles and simmer 2 minutes.

Variations:

– May add lemon juice or vinegar with hot sauce to give it a Hot & Sour taste.
